A SKU, or stock-keeping unit, is the identifier a retailer assigns to a specific product variant, used internally to track inventory and pricing. In e-commerce data, the SKU is the join key: it's what lets a price observed today match the same price observed yesterday, and what lets a brand's catalog match a reseller's listing for the same item. Different stores often use different SKUs, or their own internal codes, for the same physical product, so matching across stores usually relies on a shared identifier like a UPC or GTIN rather than the SKU itself. A clean SKU-level feed is the foundation most pricing, assortment and catalog analysis is built on.
